Delicious Macadamia Ricotta

Game changing nut spread that’s become a forever household staple!!

A few weeks ago I started a raw vegan cooking course (by Rooted In Raw) & fell in LOVE with this vegan cheese! It was originally meant to be sprinkled on top of salad but my Husband & I love to use it as a nut spread, kind of like tahini! All you need is a high-speed blender & the ingredients are modifiable to your taste! soooo you really cant mess it up.

Ingredients:

  • 1 cup macadamia nuts, soaked

  • 5 garlic cloves

  • Juice of 1 large lemon or 2 small lemons

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 tbsp nutritional yeast

  • 1/4 cup water

  • 1/2 tsp sea salt

  • 1/2 tsp black pepper

    Optional Garnish: dash of paprika, green onion or parsley.

Recipe:

  1. Combine all ingredients into a high speed blender and mix until combined. Mixture should still have texture & not be too thin.

  2. Place in the fridge for 30min to thicken

  3. Garnish & enjoy!

Recipe can be stored in the fridge up to 1 week.

This recipe is modifiable to your taste! I love lots of lemon and garlic so I altered the original recipe & you can do the same.

If you’d like to try the original its a bit milder than my version & calls for 1 garlic clove instead of 5, no garlic powder & only 1/4 cup lemon juice.

NOTE: pairs well with EVERYTHING.

Crackers, veggies, in a sandwich, as pasta sauce & a recent find..as dip for latkes! Happy Holidays!
